Gentle steaming preserves the seafood’s delicate flavor, while ginger and green onions provide a fresh, fragrant foundation.
Finished with a light soy-based glaze, this dish offers a refined presentation without complicated preparation.
Ingredients
- 1 whole fresh crab, approximately 700g, cleaned and prepared
- 3 slices fresh ginger
- 2 green onions, thinly sliced and divided
- 2 cups water, for steaming
- 2 tablespoons low-sodium soy sauce
- 1 tablespoon oyster sauce
- 1 teaspoon sesame oil
- 1 teaspoon sugar
- 2 tablespoons hot water
- 1 teaspoon cornstarch
- 1 tablespoon water, for the cornstarch slurry
- 1 teaspoon toasted sesame seeds, optional
Instructions
Step 1: Prepare the Crab
Arrange the ginger slices on a heatproof plate that fits inside your steamer. Position the cleaned crab on top and distribute half of the green onions around it.
Pour the steaming water into a steamer base and bring it to a steady boil.
Step 2: Steam Until Cooked
Place the plate inside the steamer and cover with a lid. Steam for approximately 18–22 minutes, adjusting the time according to the crab’s size and preparation.
Check that the meat is firm, pearly, and opaque. Use a food thermometer to verify that the crab reaches a safe internal temperature according to applicable seafood cooking guidance. Carefully remove the plate once the crab is fully cooked.
Step 3: Prepare the Sauce
Combine the soy sauce, oyster sauce, sesame oil, sugar, and hot water in a small saucepan. Heat gently, stirring until the sugar dissolves.
In a separate bowl, mix the cornstarch with one tablespoon of water until smooth. Gradually stir the mixture into the saucepan. Continue heating over low heat, stirring constantly, until the sauce becomes glossy and lightly thickened.
Step 4: Finish the Dish
Arrange the steamed crab in a warm serving bowl or on a platter. Spoon the sauce over the crab, allowing a little to collect around the base.
Garnish with the remaining green onions and toasted sesame seeds, if desired. Serve immediately while warm.
Tips for Excellent Results
Select Fresh, Quality Crab
Purchase crab from a reputable seafood supplier and keep it properly chilled before cooking. Choose a crab that feels substantial for its size and has a clean, fresh seafood aroma.
Keep the Sauce Delicate
The seasoning should enhance the crab rather than mask its natural sweetness. Add the sauce gradually and adjust the balance of savory and sweet flavors to suit your preference.
Thicken the Sauce Properly
Mix the cornstarch with cold or room-temperature water before adding it to the saucepan. Stir continuously over gentle heat to prevent lumps and achieve a smooth, even consistency.
Choose Complementary Sides
Serve with steamed rice and lightly cooked green vegetables. Their mild flavors balance the savory sauce and complete the meal without competing with the seafood.
Serving Suggestions
Serve the crab in a warm bowl or on a platter, with the sauce arranged neatly around it. A scattering of sesame seeds adds a subtle finishing touch, while fresh lime wedges provide an optional citrus accent.
