Ingredients

200 g plain digestive biscuits
80 g unsalted butter, melted

200 ml double cream, chilled
1 tbsp icing sugar
½ tsp vanilla extract
Preparation and Cooking Time
Preparation takes approximately 25 minutes, followed by around 15 minutes of baking. Allow at least three hours for cooling and chilling before serving.
Instructions
1. Prepare the oven and tin. Preheat the oven to 175°C, or 155°C for a fan oven. Lightly grease a 23 cm pie dish.
2. Make the biscuit crust. Crush the digestive biscuits into fine crumbs using a food processor or a sealed bag and rolling pin. Transfer them to a bowl and mix with the melted butter and sugar until evenly combined.
3. Shape the base. Press the crumb mixture firmly across the bottom and up the sides of the pie dish. Use the back of a spoon or the bottom of a glass to create an even layer. Bake for 8–10 minutes, then allow it to cool slightly.
4. Prepare the citrus filling. Whisk the egg yolks in a mixing bowl until smooth. Add the condensed milk and whisk again. Stir in the lime juice and zest until the mixture is thoroughly combined.
5. Fill the crust. Pour the mixture into the prepared biscuit shell and spread it evenly. Tap the dish gently against the work surface to release any large air bubbles.
6. Bake until set. Bake for approximately 15 minutes. The edges should look set while the centre may retain a slight wobble. Avoid overbaking, as this can affect the filling's texture.
7. Cool and chill. Leave the pie to cool at room temperature, then refrigerate for at least three hours. For cleaner slices, chill it until the filling is firm.
8. Prepare the topping. Whip the chilled cream with the icing sugar and vanilla until soft peaks form. Spread or pipe it over the cooled pie shortly before serving. Add a little extra lime zest if desired.
Tips for a Better Result
Choose fresh limes. Freshly squeezed juice gives the filling a bright flavour. Regular limes are a practical substitute for key limes, although their flavour can differ slightly. Press the crust firmly. Loose crumbs can make the base fall apart when sliced. Compact the mixture evenly, especially around the edges.
Give the pie enough chilling time. Cutting it while warm can cause the filling to slump. Refrigeration improves its firmness and makes serving easier. For a slightly lighter citrus flavour, reduce the lime zest rather than removing the juice, which helps provide the filling's characteristic tang.
