1 tbsp soy sauce
1 tbsp lime juice
1 tsp brown sugar
2 tbsp chopped fresh coriander
200 g cooked jasmine rice, for serving

Instructions

1. Heat the oil in a saucepan over medium heat. Add the curry paste and stir for one minute.
2. Pour in the coconut milk and vegetable stock, mixing well.
3. Add the sweet potato and simmer for 12–15 minutes until it begins to soften.
4. Add the green beans and cook for another 5–7 minutes.
5. Stir in the spinach, soy sauce, lime juice, and sugar. Cook until the vegetables are tender.

Ginger and Coconut Chicken Soup

300 g boneless chicken
1 tbsp vegetable oil

1 small red chilli, sliced, optional

200 g rice noodles
1 tbsp vegetable oil

150 g shredded cabbage

1 garlic clove, minced
1 tsp grated fresh ginger
For the dressing:
2 tbsp soy sauce
1 tbsp lime juice
1 tsp sesame oil
1 tsp maple syrup
2 tbsp water

Instructions

1. Prepare the noodles according to the packet instructions, then drain.
2. Whisk the soy sauce, lime juice, sesame oil, maple syrup, and water in a bowl.
3. Heat the vegetable oil in a wok or frying pan. Add the garlic and ginger and stir for 30 seconds.
4. Add the carrot, pepper, and cabbage. Stir-fry for 3–5 minutes.
5. Add the noodles and dressing, tossing until evenly coated and heated through.
