Ingredients
1 can (400 g) chickpeas, drained and rinsed
2 medium carrots, chopped

2 tbsp olive oil

Salt and black pepper, to taste
For the dressing:
2 tbsp tahini
2 tbsp lemon juice
1 small garlic clove, grated
2–3 tbsp water
1 tsp maple syrup
Instructions
1. Preheat the oven to 200°C, or 180°C for a fan oven. Arrange the vegetables and chickpeas on a baking tray.
2. Add olive oil, cumin, salt, and pepper. Toss well and roast for 25–35 minutes, turning halfway through.
3. Whisk the tahini, lemon juice, garlic, and maple syrup in a bowl. Gradually add water until smooth and pourable.
4. Divide the roasted ingredients between bowls and drizzle with the dressing before serving.
Crispy Tofu With Sesame-Lime Dressing
Golden tofu pairs well with crunchy vegetables and fluffy rice. Its mild flavour makes it ideal for a sesame-lime dressing that combines nutty richness, citrus sharpness, and gentle sweetness.
Ingredients
300 g firm tofu, pressed and cubed
1 tbsp cornflour
1 tbsp olive oil
200 g cooked rice
1 cucumber, sliced
1 carrot, grated
2 spring onions, chopped
For the dressing:
1 tbsp sesame oil
1 tbsp soy sauce
1 tbsp lime juice
1 tsp maple syrup
1 tsp sesame seeds
1–2 tbsp water
Instructions
1. Pat the tofu dry and toss the cubes with cornflour.
2. Heat the olive oil in a frying pan over medium heat. Cook the tofu for 8–12 minutes, turning until golden.
3. Whisk the sesame oil, soy sauce, lime juice, maple syrup, sesame seeds, and water.
4. Divide the rice, cucumber, carrot, and spring onions between bowls. Add the tofu and drizzle with dressing.
Warm Lentil Salad With Mustard Dressing
Lentils make a hearty base for this warm salad, while roasted tomatoes add sweetness and spinach brings freshness. A mustard dressing balances the earthy flavours with a tangy finish.

250 g cooked green or brown lentils
200 g cherry tomatoes, halved
100 g baby spinach
1 small red onion, sliced
1 tbsp olive oil
Salt and black pepper, to taste
For the dressing:
1 tbsp Dijon mustard
2 tbsp olive oil
1 tbsp apple cider vinegar
1 tsp maple syrup
1 tbsp water
Instructions
1. Preheat the oven to 200°C, or 180°C for a fan oven. Arrange the tomatoes and onion on a baking tray, drizzle with olive oil, and season.
2. Roast for 15–20 minutes, until softened.
3. Whisk the mustard, olive oil, vinegar, maple syrup, and water until combined.
4. Warm the lentils in a saucepan over low heat. Stir in the spinach until wilted.
5. Add the roasted vegetables, pour over the dressing, and mix gently before serving.
