When we want a cool homemade dessert with a fresh citrus taste, lemon ice cream is a lovely choice. It has a bright lemon flavor, a creamy texture, and a simple ingredient list. Fresh lemon juice brings a lively taste, while grated lemon peel adds a deeper citrus aroma.
Heavy cream and whole milk then soften the sharpness and create a smooth base. With a little preparation, we can make it easily at home.

Ingredients

Before we begin, let us measure everything so the process moves smoothly. The first three items form the lemon mixture, and the last three make the creamy base:
- 20 g finely grated lemon peel
- 125 ml fresh lemon juice
- 100 g granulated sugar
- 375 ml heavy cream
- 125 ml whole milk
- A small pinch of kosher salt
This makes about 1 quart. We need both the peel and the juice, so choose fresh lemons with plenty of juice.

Step 1: Prepare the Lemons

Wash and dry the lemons first. Using a fine grater, collect 20 g of lemon peel. Grate only the bright outer layer and avoid the pale layer underneath, which can bring a bitter taste.
Next, cut the lemons in half and squeeze them until we have 125 ml of fresh juice. Remove any seeds from the juice and set it aside.

Step 2: Blend the Lemon Mixture

Place the lemon peel, lemon juice, and 100 g of granulated sugar into a blender. Blend at medium speed for 2 to 3 minutes. The sugar should dissolve into the juice, while the blender breaks the peel into very small pieces.
If some mixture sticks to the sides, stop the blender and scrape it down with a spatula. Then continue blending until the mixture looks evenly combined.

Step 3: Make the Creamy Base

In a large clean bowl, combine 375 ml heavy cream, 125 ml whole milk, and a small pinch of kosher salt. Stir gently with a whisk until the dairy ingredients are evenly mixed.
Slowly pour the lemon mixture into the bowl while continuing to stir. Keep mixing until the liquid looks smooth and consistent. At this point, the fresh lemon aroma should be easy to notice.

Step 4: Chill and Strain

Cover the bowl and refrigerate the mixture for at least 2 hours. Chilling the base thoroughly prepares it for the ice cream machine.
After chilling, pour the mixture through a fine sieve into another container. This removes larger pieces of lemon peel and any remaining solids, which gives us a smoother base for churning.

Step 5: Churn the Ice Cream

Pour the cold, strained mixture into the ice cream machine. Churn it according to the manufacturer's instructions, since different machines require different processing times.
As the machine runs, the liquid will gradually become thicker and creamier. When it reaches the texture of freshly churned ice cream, we can move on to the final freezing stage.

Step 6: Freeze Until Firm

Transfer the freshly churned ice cream to a freezer-safe container. Smooth the surface with a spoon or spatula, then cover it securely. Freeze for about 8 hours or overnight. This longer freezing period allows the dessert to become firm enough for easy scooping.

Serve and Enjoy

When we are ready to serve it, let the container sit at room temperature for a few minutes. This makes scooping easier while keeping the ice cream properly chilled.
Lykkers, we can serve each scoop on its own or add a little grated lemon peel, fresh berries, or a crisp biscuit for extra texture. The result is creamy, cool, and full of fresh citrus character.
The two waiting stages take the most time, with at least 2 hours of chilling before churning and about 8 hours in the freezer afterward. Starting the day before we plan to serve makes the timing easy.
