Duck teriyaki soba is a flavorful noodle dish that combines tender duck with chewy buckwheat noodles, earthy shiitake mushrooms, crisp vegetables, and a glossy homemade sauce.
Each component brings something different to the plate, from the rich duck to the fresh bite of scallions and carrots. The recipe takes a little preparation, but the finished dish offers a satisfying combination of sweet, savory, and fresh flavors in every bite.

Ingredients

For the teriyaki sauce
120 ml water
60 ml tamari
60 g brown sugar
1 tablespoon grated fresh ginger
1 teaspoon cornstarch
1 tablespoon cold water
For the duck
2 duck, about 200 g each
1 medium carrot
4 scallions
1 tablespoon neutral cooking oil
For the soba noodles
180 g soba noodles
100 g shiitake mushrooms, thinly sliced
1 tablespoon tamari
1 teaspoon sesame oil
1 teaspoon teriyaki sauce
Preparation time: about 25 minutes
Marinating time: 1 hour
Cooking time: about 20 minutes
Serves: 2

Preparing the Teriyaki Sauce

The sauce should be thick enough to cling to the duck without becoming overly heavy. Combine the water, tamari, brown sugar, and grated ginger in a small saucepan. Bring the mixture to a gentle boil, then lower the heat and simmer for about 8–10 minutes.
In a small bowl, stir the cornstarch with cold water until smooth. Gradually whisk this mixture into the simmering sauce. Continue cooking for about one minute, stirring constantly, until the sauce becomes lightly thickened. Remove it from the heat and allow it to cool.

Preparing the Duck

Trim the duck as needed and place the pieces on a clean cutting board. Using a sharp tools, carefully make connected diagonal cuts through each piece to create a longer, thinner section. Take care not to cut completely through the meat. Peel the carrot and cut it into long, narrow sticks. Trim the scallions to a similar length, then pair the carrot pieces with the scallions to create compact vegetable bundles.
Lay one elongated piece of duck flat and place a vegetable bundle at one end. Roll the duck firmly around the vegetables, keeping the filling centered. Secure the end with a toothpick if necessary. Repeat with the remaining duck and vegetables. Place the wrapped duck in a covered container and coat it with about two-thirds of the cooled teriyaki sauce. Reserve the remaining sauce for cooking and glazing. Refrigerate for one hour so the flavor can develop.

Cooking the Soba

Bring a saucepan of water to a boil and cook the soba noodles according to the package directions. Once tender, drain and rinse them under cool water to remove excess surface starch. Heat a skillet over medium heat and add the sliced shiitake mushrooms. Cook until softened, then add the soba noodles, tamari, sesame oil, and a teaspoon of the teriyaki sauce. Toss gently until everything is evenly coated and heated through.
