Inspired by North African home-style cooking, this tomato egg skillet combines soft-cooked eggs with a rich tomato sauce layered with onion, aromatic spices, and fresh herbs.

Ingredients (Serves 2)
To keep everything clear and easy, we prepare the following:
Main ingredients:
- 3 medium tomatoes (about 300–350g), chopped
- 1 medium onion (about 80–120g), finely sliced
- 4 eggs
- 1 small handful fresh coriander (about 10g), chopped
- 2 slices slightly firm bread (optional, for serving)
Seasoning and flavor base:
- 3 tablespoons olive oil (about 45ml)
- ½ teaspoon salt, or to taste
- 1 teaspoon cumin seeds or ½ teaspoon ground cumin
- 1 teaspoon smoked paprika
- ½ teaspoon chili powder, according to preference
- 2 garlic cloves, finely chopped (optional)
- 2 tablespoons water, if needed
Method
Step 1: Preparing the Flavor Base
1. Heat a wide pan over medium heat and add the olive oil.
2. Add the sliced onion and cook for 3–4 minutes, stirring occasionally, until softened and translucent.
3. Add the salt to help release moisture and enhance the onion's natural sweetness.
4. If using garlic, add it and cook for about 30 seconds until fragrant.
Step 2: Build the Aromatic Base
1. Add the cumin and stir for approximately 30 seconds.
2. Add the smoked paprika and stir quickly to release its aroma without burning the spices.
3. Continue cooking for another 30–60 seconds until the flavors are well combined.
Step 3: Create the Tomato Sauce
1. Add the chopped tomatoes and stir well to combine with the onion and spice mixture.
2. Reduce the heat slightly and simmer for 6–8 minutes.
3. Gently press the tomatoes with a spoon as they soften to help release their juices.
4. If the sauce becomes too thick, add 2–3 tablespoons of water as needed.
5. Taste and adjust seasoning if necessary.
The sauce should become rich, slightly chunky, and well blended.
Step 4: Prepare for the Eggs
1. Add the chili powder according to your preferred spice level.
2. Stir and cook for an additional 1–2 minutes.
3. Using a spoon, create small wells in the sauce.
Step 5: Cook the Eggs
1. Gently add the eggs into the wells prepared in the sauce.
2. Cover the pan and cook over low heat for 4–6 minutes.
3. For softer yolks, remove from heat once the egg whites are mostly set.
4. For firmer eggs, continue cooking for an additional 2–3 minutes.
The residual heat from the sauce will continue cooking the eggs gently after the pan is removed from the heat.
Step 6: Garnish and Serve
1. Sprinkle freshly chopped coriander over the skillet.
2. Warm the bread lightly until slightly crisp on the outside.
3. Serve immediately and enjoy with the bread dipped into the rich tomato sauce.
