Well, I’ve got two absolutely delicious cookie recipes that are easy to make, super satisfying, and perfect for sharing. Let’s start baking!

1. Italian Ricotta Cookies – Soft, Fluffy & Totally Dreamy

These cookies are so soft and pillowy, they almost feel like little clouds of sweetness. Ricotta might sound unusual in a cookie, but trust me—it makes the texture heavenly.
Ingredients:
- 2 cups all-purpose flour
- 1 tsp baking powder
- ¼ tsp baking soda
- ¼ tsp salt
- ½ cup (1 stick) unsalted butter, softened
- 1 cup sugar
- 1 egg
- 1 tsp vanilla extract
- 1 cup ricotta cheese (whole milk works best)
For the glaze:
- 1 cup powdered sugar
- 2–3 tbsp milk
- ½ tsp almond or vanilla extract

How to Make:
1. Preheat your oven to 350°F (175°C).
2. Cream butter and sugar together until light and fluffy.
3. Beat in the egg, ricotta, and vanilla.
4. In another bowl, mix the dry ingredients and slowly add to the wet mixture.
5. Spoon generous tablespoons of dough onto a baking sheet lined with parchment paper.
6. Bake for 12–15 minutes until set (not browned). Cool completely.
7. Mix glaze ingredients and drizzle over cooled cookies. Add sprinkles if you're feeling fancy.

2. The Best Soft Gingerbread Cookies – Sweet, Spicy & So Cozy

This one’s for the spice lovers. These cookies are soft, chewy, and full of warm gingerbread flavor—the kind that makes your kitchen smell like a holiday hug.
Ingredients:
- 2 ¼ cups all-purpose flour
- 1 tsp baking soda
- 1 ½ tsp ground ginger
- 1 tsp cinnamon
- ½ tsp ground cloves
- ¼ tsp nutmeg
- ¼ tsp salt
- ¾ cup unsalted butter, softened
- 1 cup brown sugar
- 1 egg
- ¼ cup molasses
- 2 tbsp sugar (for rolling)
How to Make:
1. Preheat oven to 350°F (175°C).
2. Whisk together flour, baking soda, and spices.
3. Cream butter and brown sugar until light. Add egg and molasses, mixing well.
4. Slowly add dry ingredients to form dough. Chill for 30 minutes.
5. Roll dough into balls, coat with sugar, and place on baking sheet.
6. Bake for 8–10 minutes. Let them cool slightly for that perfect soft center.
