Hey Lykkers! Ever have one of those weeks where cooking feels like a full-time job you didn’t sign up for? Yep, we’ve all been there. That’s why freezer meals are total lifesavers. Cook once, eat multiple times — it’s like your future self saying “thanks, past me!”
Today I’m sharing two easy, no-fuss freezer meals that are perfect for prepping ahead and reheating whenever life gets hectic. Let’s dive in!
1. Cheesy Baked Ziti (Freezer-Friendly Comfort Food)
This one’s cozy, cheesy, and perfect for a quick dinner. Plus, it freezes like a dream!
You’ll need:
- 1 lb (450g) ziti or penne pasta
- 2 cups marinara sauce
- 1 cup ricotta cheese
- 2 cups shredded mozzarella
- ½ cup grated Parmesan
- 1 tsp garlic powder
- Salt & pepper to taste
How to make it:
1. Cook the pasta until just al dente, then drain.
2. Mix pasta with marinara sauce, ricotta, garlic powder, salt, and pepper.
3. Spread half in a baking dish, sprinkle with mozzarella and Parmesan.
4. Add the rest of the pasta and top with more cheese.
5. Cover tightly with foil and freeze (uncooked) or bake at 375°F (190°C) for 20–25 mins until bubbly.
6. To reheat from frozen, bake covered at 375°F for about 45 minutes, then uncover and bake for 10 more.
Bonus tip: You can portion it into smaller containers before freezing — perfect for individual meals!
2. Chicken and Veggie Burritos (Grab-and-Go Goodness)
These burritos are loaded with flavor, protein-packed, and super handy for lunches or dinners. Just heat and eat!
You’ll need:
- 2 cups cooked shredded chicken (use rotisserie to save time)
- 1 cup cooked rice
- 1 cup canned black beans, drained
- 1 cup corn (fresh or frozen)
- 1 cup shredded cheddar or pepper jack
- ½ cup salsa
- ½ tsp cumin + chili powder
- 4–6 large flour tortillas
How to make them:
1. In a bowl, mix chicken, rice, beans, corn, salsa, spices, and cheese.
2. Spoon into tortillas and roll into burritos.
3. Wrap each burrito tightly in foil or plastic wrap.
4. Freeze in a zip-top bag or airtight container.
To reheat: Microwave for 2–3 minutes or bake at 350°F (175°C) for 25 minutes until heated through.
These two make-ahead meals are not only delicious but also give you peace of mind on the busiest days. Just grab, heat, and enjoy — no stress, no mess.
