Sometimes we just want something hot, healthy, and fast. That's where this Chinese-style cabbage and tofu soup comes in. It's light, warm, and takes only five minutes from stove to table.

What we need (serves 2–3)

• A dash of white pepper
• A pinch of salt or light soy sauce
• Optional: sesame oil, chopped scallions, goji berries
How to cook it in 5 minutes
1. In a small pot, heat the water or broth. Add the garlic and ginger slices.
2. Once it starts to boil, toss in the napa cabbage. Let it cook for 2 minutes until it softens slightly.
3. Add the tofu cubes gently so they don't break apart. Simmer for another 2 minutes.
