Asinan Bogor is a classic fruit pickle from the Bogor region of Indonesia. It is a perfect combination of fresh, crispy and sweet tropical fruits with a tangy and spicy peanut sauce, which is both appetizing and refreshing.
This delicacy is suitable for friends who like sour and spicy flavors. It is very popular as a snack or a side dish.

Ingredients (4 servings)

Fruit:
- Green mango — 150g, peeled and sliced
- Pineapple — 150g, cut into small pieces
- Jicama — 150g, peeled and cut into strips
- Cucumber — 150g, sliced
(You can add papaya, guava and other fruits according to your personal preference)
Seasoning sauce:
- Cooked peanuts — 100g
- Dried red chili — 6 (adjust according to your preference for spiciness)
- Palm sugar or brown sugar — 50g
- Tamarind paste — 15ml (1 tablespoon), 3 tablespoons of white vinegar can be used instead
- Salt — 1 teaspoon
- Water — 120ml

Step 1: Process the fruit

1. Wash and peel all the fruits, and cut them into even-sized pieces or strips.
2. Soak the cut fruit in cold water with a pinch of salt for 10 minutes to help keep the fruit crisp.
3. Remove the fruit and pat dry with paper towels.

Step 2: Make spicy peanut sauce

1. Soak the dried red chilies in warm water for 10 minutes to soften them.
2. Use a grinder to slightly break up the cooked peanuts, keeping them granular.
3. Place the softened chilies, peanuts, palm sugar, tamarind paste, salt and 120 ml of water in a blender and blend into a thick and smooth sauce.
4. Adjust the thickness of the sauce as needed, and add water if you like it thinner.
5. Taste and adjust the amount of salt and sugar to your taste.

Step 3: Mix the pickles

1. Put the processed fruit in a large bowl.
2. Pour the spicy peanut sauce into the fruit bowl and stir gently with a large spoon to coat the fruit evenly with the sauce.
3. Be careful to stir gently to avoid crushing the fruit.

Step 4: Marinate and Enjoy

1. Let the mixed Asinan Bogor stand for 15-30 minutes to allow the fruit to fully absorb the flavor of the sauce.
2. If you like to eat it cold, you can put it in the refrigerator for 10-15 minutes in advance.
3. When tasting, you can feel the perfect combination of the crispness of the fruit and the spicy and sweet sauce, which is very appetizing.

- Adjust the amount of chili to suit different preferences for spiciness.
- Choose fresh and crispy fruits to ensure the taste.
- Tamarind sauce is the key to seasoning. It cannot be replaced by white vinegar, but the flavor is slightly different.
