Šaltibarščiai, also called cold pink soup, is a traditional Lithuanian dish with centuries of history. Its signature pink color comes from beetroots, and it is a beloved summer meal across the country. In recent years, the soup's popularity has grown internationally, inspiring Vilnius' annual “Pink Soup Fest.”
This refreshing soup is perfect as a first course or a light summer meal. Its combination of beets, cucumbers, fresh dill, and spring onions with sour milk or kefir gives it a tangy, creamy flavor. Traditionally, it is served with boiled potatoes and garnished with hard-boiled eggs and extra dill.
What is Šaltibarščiai?
Šaltibarščiai means “cold borscht” in Lithuanian. It is usually served chilled and is especially popular during warm weather. The beetroot provides a vivid pink hue and earthy sweetness, while herbs and sour milk balance the flavors. It's commonly found in Lithuanian homes and restaurants in the summer months.
Ingredients
Soup
1 liter sour milk (6%)
2 medium cucumbers
250 g boiled beets
40 g spring onions
20 g fresh dill
30–40 ml lemon juice
1 tsp salt
Garnish
1 boiled egg per bowl
How to Prepare
1. Prepare boiled potatoes and eggs (5–7 minutes for eggs).
2. Grate the beets, slice cucumbers into triangles, and chop dill and spring onions.
3. Press the mixture lightly with a spoon to release juice. Add lemon juice and salt, mixing well.
4. Pour in the sour milk and combine thoroughly. Adjust lemon and salt to taste. Chill until serving.
5. Serve the soup in bowls, cut eggs into wedges, and sprinkle with green onion. Serve boiled potatoes on the side.
Serving Tips
Traditionally, Šaltibarščiai is accompanied by boiled potatoes, which can be eaten with the soup or separately. Some also enjoy fried potatoes, French fries, or mashed potatoes alongside it.
Storing Šaltibarščiai
Refrigerate in an airtight container for 2–3 days, stirring before serving.
Freeze is not recommended as it may alter the soup's texture.
